Step 1: Braise rolled Chashu pork

Sear rolled pork belly on all sides until golden. Braise in Shoyu, Mirin, Sake, sugar, ginger, and water on low heat for 1.5 hours until fork tender.

Step 2: Marinate soft-boiled ramen eggs

Boil eggs for exactly 6 minutes and 30 seconds. Transfer immediately to ice water, peel, and marinate in cool braising liquid for at least 2 hours.

Step 3: Simmer rich pork broth

Boil pork bones for 2-3 hours until broth turns milky white and rich. Season with a ladle of Chashu braising sauce.

Step 4: Cook noodles and assemble

Boil fresh ramen noodles for 2 minutes and drain. Ladle hot broth over noodles, top with sliced Chashu pork, half ramen egg, bamboo shoots, and Nori seaweed.

Rolled Chashu Pork Belly
600g pork belly rolled tightly and bound with twine
Chashu Braising Sauce (Shoyu tare)
150ml Shoyu soy sauce, 100ml Mirin, 50ml Sake, 2 tbsp sugar, sliced ginger, 3 garlic cloves
Ramen Eggs (Ajitsuke Tamago)
4 soft-boiled eggs (6 mins) peeled and marinated in soy mirin sauce
Toppings & Nori Seaweed
Menma bamboo shoots, Nori seaweed sheets, chopped green onions, black pepper
