Slice green papaya and carrot into paper-thin rounds. Toss with 1 tsp salt, rest 10 minutes, and squeeze dry. Pickle with 2 tbsp sugar, 1.5 tbsp rice vinegar, and lime juice for crisp texture.

Charcoal Grill Pork

Shape ground pork into small flat patties. Arrange patties and pork belly slices on a wire grilling rack. Grill over glowing charcoal, basting with oil, until caramelized, slightly charred, and aromatic.

Whisk warm water, fish sauce, sugar, rice vinegar, and lime juice until balanced. Pour warm sauce into individual bowls, add grilled pork patties, pork slices, and pickled papaya. Serve alongside fresh rice vermicelli and herbs.
